Biography
Mary Glover-Amengor is a researcher in food chemistry and public health nutrition with an interest in the nutritional needs of low socioeconomic groups. Mary has 26 years’ experience as a researcher with the Council for Scientific and Industrial Research (CSIR) in Ghana. She has worked on the micronutrient and macronutrient composition of Moringa Oleifera leaves and other green leafy vegetables. She has also researched into the nutrient composition of under-utilised fish species and processing by-products. She has university teaching experience at both undergraduate and postgraduate levels, and considerable experience in the supervision of students’ project works and theses. Mary also mentors younger scientists.
